| Ingredients 250 ml milk 55 grams of sugar 1 Lemon peel 1 cinnamon stick 2 egg yolks 20 grams of cornstarch Directions Place 200 ml of milk together with 55 g of sugar in a microwave-safe container . Add a few pieces of lemon peel (without the white part, which is very sour). Be careful, we are only going to add 200 ml of milk in this step, the other 50 ml will be used later. Add a cinnamon stick to the container and microwave on full power for 2 minutes. Remember that in this recipe for pastry cream we must be very careful with the instructions, both with the amounts we add of each ingredient and with the time we use the microwave. Meanwhile in another container we add the 2 egg yolks (I like to keep the whites and use them for something else, so we don't waste them). Now we are going to add the 50 ml of milk that we reserved in the first step and stir. Then add 20 gr of cornstarch to the egg and beat until perfectly blended. Remove the milk with sugar from the microwave (it should be very hot) and mix it with the egg yolks and cornstarch. For this we are going to use a small strainer, so that the lemon peels and cinnamon remains stay in the strainer Put the container in the microwave for 1 more minute, at maximum power. Finally we are going to remove it from the microwave and beat well. Do not be scared by its appearance as soon as you remove it, when you stir with a whisk it will be fully integrated. Check that it has the consistency that we like the most. If we want it more liquid, we can add a a few drops of milk and take it back a few to the microwave for a few seconds, beating again when we remove it. |
