VINAGRETTE BEEF TONGUE INSTAPOT

Ingredients:

  • 4 lb beef tongue

  • 6 cups water enough to cover or almost cover the tongue

  • 1 tablespoon salt

  • 1 bay leaf

  • 1/2 onion cut in quarters

  • 1 teaspoon black pepper

  • parsley

  • minced garlic

  • corn oil

  • White vinegar

Directions

  • Rinse the beef tongue under the cold water. Add to the inner pot. Add water just to cover the meat. Add salt and pepper. Add haft an onion, you can leave it as is or slice it. Add bay leaf

  • Close and lock the lid. Cook on manual for 50 minute for a 4 lb beef tongue. 3lb probably will be cooked in 40 minutes.

  • Quick release. Carefully open the lid. Take the tongue out and let cool. Peel the skin, it should peel off very easy. Slice beef tongue and serve with scallions or cilantro on top. Serve it over white rice if desired.

  • you can also chop the parsley and mix it with the garlic. Spread over the sliced tongue and cover with oil and 2 spoons of white vinegar
