TUSCAN SALMON

INGREDIENTS
4 Salmon Fillets
½ cup of chopped onion
Garlic
240g of tomatoes, or 1 small can of cherry tomatoes in halves
1 tbsp of tomato sauce (ketchup)
⅓ cup of white wine and/or broth
1 cup of heavy cream or coconut milk or evaporated milk
Salt
Spinach strips
⅓ cup grated Parmesan cheese
Basil
STEP-BY-STEP PREPARATION
Season the salmon with a teaspoon of salt.
Brown it in a little oil, remove
Sauté the onion and garlic
Add the tomato and tomato sauce
Add the wine and/or broth
Add 1 1/2 tsp of salt
Add the cream, spinach and basil
Add the Parmesan cheese, cook well
When it is almost ready add the fish
Cook a little and serve
