TANGERINE CAKE (Mariana Klurfan)

INGREDIENTS:
2 large mandarins, peeled (optional) and seeded.
2 eggs (if large) or 3 small ones
1 1/2 cups sugar
3/4 (three-quarters) cup oil
INSTRUCTIONS
Blend the 2 peeled and seeded mandarins. I also add them with the peel on because I like the more bitter taste.
Add 2 eggs (if large) or 3 small ones, 1 1/2 cups sugar, and 3/4 (three-quarters) cup oil and blend again until combined. Then, add 2 cups of self-rising flour to the blender and blend again. Grease and flour the pan and place it in a medium oven for 45 minutes, until a toothpick comes out clean.
