SPINACH SOUFFLÉ

Ingredients:

  • 1 kg of spinach washed, stemmed and drained.

  •  1 tbsp. of oil,

  • 1 clove garlic,

  •  1/2 tsp. of salt,

  •   Pepper,

  •   Nutmeg,

  •   4 eggs,

  •  1/4 cup heavy whipping cream,

  •   Butter

  •  2 tbsp. breadcrumbs (or matzo Meal for Passover)

 1 tbsp. butter



Directions:

  • Heat the oil in a pot.

  • Fry the garlic and add the spinach. Simmer for 3 minutes. Season with salt, pepper and nutmeg.

  •   Beat the eggs with the cream and add.

  • Butter a mold and pour The batter. Sprinkle with breadcrumbs and bits of butter.

  • Cook in a preheated oven for 15 min.
