SPINACH SHAKSHUKA

Ingredients

  • Non-stick pan spray

  • ½ cup chopped onion

  • 1 package (10 ounces) frozen chopped spinach, thawed and drained

  • 2.5 cups sliced ​​mushrooms

  •  6 beaten eggs

  • 3 cups shredded low-fat Muenster cheese

  • 1/4 teaspoon salt

  • 1/8 teaspoon ground black pepper

 Directions

 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch cake pan with cooking spray.

 2. Heat oil in a large skillet over medium-high heat. Add the onions and mushrooms and cook, stirring occasionally, until the onions are soft. Add spinach and continue cooking until excess moisture evaporates.

 3. In a large bowl, combine the eggs, cheese, salt, and pepper. Add the spinach mixture and toss to combine. Pour into prepared cake pan.

 4. Bake in preheated oven until eggs have hardened, about 30 minutes. Let cool for 10 minutes before serving.
