SALMON WITH GARLIC BUTTER, HONEY AND MUSTARD IN FOIL

Ingredients: 4 salmon fillets (about 6 ounces each) Salt and pepper to taste 4 tablespoons butter or margarine, melted 4 cloves garlic, minced 3 tablespoons of honey 2 tablespoons Dijon mustard 2 tablespoons whole grain mustard 2 tablespoons fresh parsley, chopped 1 tablespoon lemon juice Lemon slices, to decorate Directions: Preheat your oven to 375°F (190°C). Place each salmon fillet on a piece of aluminum foil large enough to fold over and seal. Season each fillet with salt and pepper. In a bowl, whisk together the melted butter, minced garlic, honey, Dijon mustard, whole grain mustard, and lemon juice. Pour the garlic butter mixture over the salmon fillets evenly. Sprinkle chopped parsley on top and add lemon wedges if desired. Fold the foil over the salmon and seal to create a packet. Bake in the preheated oven for 15 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork. Serve hot, garnished with additional fresh parsley and lemon wedges.
