RED WINE POACHED PEARS

PREP TIME: 15 MINUTES PRESSURE COOK: 1 MINUTESINGREDIENTS6 firm pears, peeled

1 bottle of red wine - a dry, tarty, tannic red wine (like Sangiovese or Barbaresco)

1 bay laurel leaf

4 Cloves(thespice)

1 stick or 1 tsp (5 mL) of cinnamon

1tsp (5 mL) of ginger, or 1piece of fresh

1 bunch of herbs for decoration - sage, mint, oregano or basil (optional)DIRECTIONS:1. Peel the pears but leave the stems attached. Pour the bottle of wine into the Instant Pot®. Add the bay leaf, cloves, cinnamon, ginger and sugar. Mix well to dissolve. Add the pears to the pressure cooker.

2. Close and lock the lid. Select Pressure Cook] or Manual and then adjust the [+] or H) button to set 9 minutes of pressure cook time.

3. When time is up, open the pressure cooker using the quick release (see page 7).

4. Carefully remove the pears with tongs, removing them from their stems. Set the pears aside and select [Saute], tops removed, to reduce the cooking liquid by about half.

Filter and then drizzle mulled wine syrup over the pears. Garnish with herbs and serve at room temperature or cold.
