POTATO KNISHES

Ingredients:

Dough:

  • 500gr. Of all purpose flour

  • 2 eggs

  • 3 tablespoons of vegetable oil

  • 2 tablespoons white vinegar

  • 1 tablespoon fine salt

  • warm water

Directions:

  • Form a crown with the flour and salt. In the center put the oil, eggs and vinegar. Little by little, add the warm water and form a very tender dough, work well (kneading and hitting the dough). Let stand covered for about 30 minutes.



Stuffing:

  • 1kg of potato

  • 4 large onions

  • salt, pepper, sugar

  • 1 beaten egg.

Directions:

  • Peel the potatoes, boil in plenty of salted water until tender. Drain and mash.

  • Finely chop the onions, sauté in oil over low heat until golden brown.

  •  Add the sautéed onions to the puree, season with salt, pepper and sugar.

  • On the counter, stretch the dough until it is very thin. With the stuffing form a cord at one end, roll up and brush with the beaten egg.

  • Cut the dough by hand and form the kniches.

  • Put on oiled pans, brush with the beaten egg and bake at high temperature until lightly golden.
