PEARS COVERED IN CHOCOLATE

Ingredients :

  • 10 small pears,

  • 280 ml of fruity red wine,

  • 50 gr of sugar,

  • 1 grated lemon peel,

  • 150 gr of hot chocolate,

  • 50 gr of cream



Preparation :

  • Peel the pears, leaving the stems. Remove the core from the bottom.

  • Slowly heat the wine with the sugar and lemon until it begins to boil.

  • Arrange the pears vertically in the saucepan, and cover with a tight-fitting lid to allow them to steam.

  • Reduce heat to a gentle simmer. Cook for 20 to 30 minutes, or until the pears are tender when inserted with a knife.

  • Remove the pears from the liquid and let them cool.

  • Reduce the liquid by boiling rapidly uncovered until a syrup is obtained.

  • Place the chocolate and cream in a bowl and melt in a double boiler. Add the wine reduction and stir for a couple of minutes in a double boiler. Let cool and pour over the pears as soon as it begins to thicken.

  • Serve with whipped cream
