Ingredients :
Preparation : Peel the pears, leaving the stems. Remove the core from the bottom. Slowly heat the wine with the sugar and lemon until it begins to boil. Arrange the pears vertically in the saucepan, and cover with a tight-fitting lid to allow them to steam. Reduce heat to a gentle simmer. Cook for 20 to 30 minutes, or until the pears are tender when inserted with a knife. Remove the pears from the liquid and let them cool. Reduce the liquid by boiling rapidly uncovered until a syrup is obtained. Place the chocolate and cream in a bowl and melt in a double boiler. Add the wine reduction and stir for a couple of minutes in a double boiler. Let cool and pour over the pears as soon as it begins to thicken. Serve with whipped cream
