PASTRAMI SCHUSTER

Ingredients:

  • 1 and 1/2 kg Roast beef

  • 1 kg Salt

  • 100 g Sugar

  • 5 cloves garlic, crushed

  • 1/4 tsp. Sodium nitrate

  • 2 tbsp. Black pepper, grains

  • 2 tbsp. Sweet paprika

  • 2 tbsp. Ground chili

  • 1 glass dry white wine

  • 5 tbsp olive oil



Directions::

  • Trim the fat off the meat, leaving only a thin layer on one side, and place in the roasting pan with fat up.

  • Then, in a bowl, mix the salt, sugar, garlic, peppercorns and sodium nitrate.

  • Afterwards, spoon the mixture over the meat, cover with water and keep refrigerated for 1 week.

  • After that time, turn the oven to low temperature to preheat it.

  • Remove the marinade, rinse the meat, place the meat in the pan,

  •  Sprinkle it with the paprika, the ground pepper, drizzle with wine, oil and 2 cups of water.

  • When the oven is hot, cook for 2 to 3 hours, basting every 20 minutes. with the pan juice

  • Remove the meat, place a light weight on top, to press, and cool to room temperature.

  • Keep refrigerated, wrapped in plastic wrap, up to 1 week,

  • You can freeze it for 6 months
