PASSOVER SPONGE CAKE 2

Ingredients:

  • 12 yolks,

  • 7 cups of sugar,

  •  juice and peel of 1 lemon or orange

  • ¼ cup of cold water,

  • 1 cup of potato starch,

  • 1 cup matzo flour, sifted

  • 12 egg whites



Directions:

  • Beat the yolks with the sugar, add the liquid ingredients and then the solids and end the egg whites to snow.

  • Cook in a greased pan lined with parchment paper siliconized for 50 or 60 minutes.

  • Taste with or toothpick until it comes out dry.

  • Unmold hot and cool on a rack

  • . Remove paper when cold
