Ingredients : 6 yolks, 1 ½ cups of sugar, ½ cup sifted matzo meal with ½ cup potato starch, ¼ cup hot water, juice and peel of 1 lemon or orange, 6 egg whites to snow
Preparation : Beat the egg yolks with the sugar until they are white. Add the hot water and the lemon juice and zest, then the flour and cornstarch. Finally, beat the egg whites until stiff. Bake in a lined pan for 1 ½ hours in a moderate oven. When removed, invert the mold and let it cool. Unmold afterwards.
