PASSOVER SPONGE CAKE

Ingredients :

  • 6 yolks,

  • 1 ½ cups of sugar,

  • ½ cup sifted matzo meal with ½ cup potato starch,

  • ¼ cup hot water,

  • juice and peel of 1 lemon or orange,

  • 6 egg whites to snow


Preparation :

  • Beat the egg yolks with the sugar until they are white.

  • Add the hot water and the lemon juice and zest, then the flour and cornstarch. Finally, beat the egg whites until stiff.

  • Bake in a lined pan for 1 ½ hours in a moderate oven.

  • When removed, invert the mold and let it cool.

  • Unmold afterwards.
