The pulp is not used, it can be squeezed or used for something else. cut into strips and boil for a long time in water, the necessary amount, until they are very tender. add sugar, the same amount of sugar as water. (that's why put only the necessary water) boil about 20 minutes, until it becomes a thick syrup. put the peels on a rack and inside a container like a roasting pan, so that they dry, sprinkle them with more sugar, when they dry, turn them over, sprinkle again, and that's it. I keep them in a jar or in the freezer. For the chocolate coating, I use semi-sweet chocolate. I melt it in a bain-marie and I pass them with a fondue stick and then I place them in a pan with aluminum foil, and in the freezer for a while, then store in the refrigerator
