Ingredients: 1 small sole, lemon juice, Salt, small mushrooms, 1 tbsp. of butter, 1 tbsp tomato paste
Directions: Clean the fish and leave it in salt. Cut the fish by sinking the knife towards the spine, but without separating the two loins. Stuff with the mushrooms, put in the pan and cover with the butter mixed with the tomato paste and salt. Cook covered for 5 to 8 minutes. Serve with sauce with mushrooms or with oport tomato sauce.
