MEDITERRANEAN CHICKEN

Ingredients:

  • 4 tablespoons of olive oil,

  • 4 chicken thighs, boneless,

  •  4 chicken legs,

  • 4 garlic cloves, crushed,

  • 2 red onions, each cut into 8 pieces,

  • 16 small potatoes, precooked and cut into quarters,

  • 3 tablespoons of black olives,

  • 2 teaspoons of chopped dried rosemary,

  • 125 g of small tomatoes,

  • 2 tablespoons sea salt or coarse salt,

  • 2 tablespoons black pepper, freshly ground



Directions:

  • Preheat the oven to 220oC. Put half the oil in a frying pan. Add all the chicken, garlic, onion and potatoes. Stir-fry for 10 minutes over medium heat.

  • Remove the mixture from the pan and transfer it to a mold to bake.

  • Add the olives, rosemary and tomatoes. mix, season with salt and pepper to taste and drizzle with the remaining oil.

  • Bake for 25 minutes or until chicken is completely browned.
