Directions Wet the peppers and roast them in the oven until they are almost burned, very soft. Put them under cold water and peel them. When they are cold, cut them into stripes or squares. Sauté the crushed garlic and chopped onion over medium heat in olive oil. Add the peppers, tomato paste and crushed tomato. Mix and season with salt and pepper to taste, add the sugar and sweet paprika. Mix and bring to a boil. When the first boil begins, lower the heat to a minimum and simmer for 15 minutes. Let it cool. Serve cold as a salad or dip.
