LEMON SQUARES

INGREDIENTS


For the dough:


1 cup of all-purpose flour

1/2 cup soft margarine at room temperature (you can use butter or coconut oil if you prefer)

2 tablespoons of sugar (or sweetener)


For the filling:


2 large eggs

1 cup sugar (1/2 cup sweetener)

2 tablespoons of flour

1/2 teaspoon baking powder

3 tablespoons of lemon juice

1 teaspoon lemon zest


Icing sugar for decorating


PREPARATION


- For the dough:

Place all the dough ingredients in a food processor. Blend slowly, scraping the bowl frequently, until the mixture forms coarse crumbs. Blend again until the dough forms a ball. Spread the dough on the bottom of a 8-inch (20 cm) square pan. Bake for 15 to 20 minutes or until the edges are lightly browned.

- For the filling:

In a bowl, beat the eggs, add the sugar, flour, baking powder, lemon juice, and zest, and whisk until smooth. Pour over the baked crust and bake for 25 more minutes or until golden brown. Let cool to room temperature and then refrigerate for at least 2 hours before serving. Remove from the refrigerator, dust with powdered sugar, and cut into squares.
