Ingredients : 1 leg of lamb, 1 head of garlic, 2 carrots, 2 leeks, 2 onions, 2 celery stalks, fresh herbs to taste (rosemary, thyme, bay leaf, parsley), peppercorns, 1 glass of red wine, water.
Preparation : Cut and defat the lamb. In a saucepan, place all the coarsely chopped vegetables, herbs, halved garlic, pepper, and lamb. Cover with the wine and water. Cook covered and gently for 4 to 5 hours. Remove the lamb and strain the cooking liquid to reheat it. Serve with mashed potatoes
