 It can be done 2 days in advance.


Ingredients

  • 4 pounds (1.8 kg) apples, mixed types, about 8 large, peeled and cut into 2-inch (5 cm) pieces

  • 1 teaspoon minced ginger (optional)

  • 1 cinnamon stick (optional)

  • 1/3 cup (79m1) of water



Directions

  • Place the apples, ginger, cinnamon stick, and water in the inner pot.

  • Secure the lid, making sure that the steam escapes and the handle is in the sealing position. Press the pressure cook button and set the cooking time to 5 minutes.

  • When cooking time is complete, let pot stand for 5 minutes to release pressure naturally.

  • Turn the steam release handle to the vent position to release any remaining pressure.

  • Press Cancel and remove the cover.

  • Remove the cinnamon stick and partially mash the apples with an immersion blender for a few seconds, leaving some chunks whole.
