Ingredients 4 pounds (1.8 kg) apples, mixed types, about 8 large, peeled and cut into 2-inch (5 cm) pieces 1 teaspoon minced ginger (optional) 1 cinnamon stick (optional) 1/3 cup (79m1) of water
Directions Place the apples, ginger, cinnamon stick, and water in the inner pot. Secure the lid, making sure that the steam escapes and the handle is in the sealing position. Press the pressure cook button and set the cooking time to 5 minutes. When cooking time is complete, let pot stand for 5 minutes to release pressure naturally. Turn the steam release handle to the vent position to release any remaining pressure. Press Cancel and remove the cover. Remove the cinnamon stick and partially mash the apples with an immersion blender for a few seconds, leaving some chunks whole.
