Ingredients : (6 servings) Yolks: 5 units Vanilla essence, 1 teaspoon Zest of 1 lemon Liquid sweetener, 2 teaspoons Skimmed milk powder, 9 level tablespoons Baking powder, 3 teaspoons Cocoa powder: 2 tablespoons (dessert spoons) Clara: 5 units
Preparation : Beat the egg yolks with an electric mixer for 5 minutes. Add the vanilla extract, lemon zest, and sweetener. Mix the milk powder with the baking powder and cocoa powder and add it to the previous preparation, alternating with the egg whites previously beaten to snow with salt. Spray a 22cm diameter mould with cooking spray, cover the bottom with a disc of baking paper, also sprayed with cooking spray, and pour the mixture inside. Bake at a moderate temperature for 40 to 50 minutes. Remove from the pan and place on a wire rack; it will shrink slightly as it cools.
