CORNSTARCH ALFAJORES

INGREDIENTS:

▪︎50 gr. Butter


▪︎50 gr. powdered sugar


▪︎Zest of ½ lemon


▪︎½ teaspoon. vanilla extract


▪︎1 egg


▪︎100 gr. Corn starch (cornstarch)


▪︎50 gr. self-rising flour


▪︎300 gr. confectioner Dulce de leche


▪︎Grated coconut



DIRECTIONS:

In a bowl you put the butter that has to be at room temperature, you can use margarine if you want, add the powdered sugar or it can be regular sugar (although it is a thousand times better with powdered sugar). Add the lemon zest and vanilla extract, beat with an electric or hand mixer, add the egg (which must be small or medium in size) and beat for a few more seconds, add the cornstarch and the self-rising flour (the flour leavening is flour with baking powder that is not available in many countries, you can use all purpose flour and add 1 teaspoon of baking powder), mix until everything is integrated and stretch 5 millimeters thick between 2 bags, take 15 to 20 minutes to freezer and use the cutter you have. You put it on a plate with parchment paper, if you only have a greased plate, put it in the oven at 180°C. for 10 to 12 minutes, do not overcook or brown them. Let it cool and fill it with plenty of dulce de leche and pass them through grated coconut. It is much tastier if you eat them the next day. They last up to 1 week if they are made with butter and if they are made with margarine they last 15 days. Make them to share with your family or for your business. This dough is very easy, economical and profitable!!!
