BRISKET IN RED WINE SAUCE

Brisket is a cut of meat that requires slow cooking to make it tender and flavorful. In this recipe, the brisket is accompanied by a wine sauce that gives the meat an even more delicious flavor.

Ingredients:
2 kg lean beef brisket
2 medium peeled onions
2 large celery stalks without leaves
6 peeled garlic cloves
1 tablespoon of tomato puree
250 ml of beef broth
250 ml of dry red wine
Salt and pepper to taste
2 to 3 tablespoons of oil
1 tablespoon of potato starch to thicken the sauce (potato starch)
Preparation:
First, clean the beef brisket, remove as much fat as possible, except for a thin layer of fat on the bottom, season with salt and pepper to taste and let it rest for approximately 60 minutes covered with plastic wrap in the refrigerator.
Remove the meat from the refrigerator and prepare a large skillet over medium heat with 2 tablespoons of oil. Fry the meat in the pan on all sides until browned and lightly browned. Remove the meat, set aside, and set aside.
Meanwhile, peel and chop the onion and celery into medium-sized pieces. Sauté the vegetables in the same pan where you sautéed the meat until lightly browned. Add the tomato paste, mix with the vegetables, and add the wine and broth. Increase the heat and bring to a boil. Turn off the heat and let it cool completely.
Preheat oven to 325 degrees F.
Prepare a baking tray.
Place half of the vegetables and liquid mixture in the tray, put the meat on top and add the other half of the vegetables and liquid over the meat, add salt and pepper over the meat. Cover the tray tightly covered with aluminum foil and put in the oven for 3 hours at 325 degrees F or until the meat is tender.
Remove the pan from the oven and let the meat rest. Meanwhile, prepare the sauce. To do this, strain the vegetables and sauce through a sieve. Dissolve the potato starch in 2 to 3 tablespoons of cold water and mix it into the sauce (add a little more water if needed). Bring to a boil, check the seasoning, and add salt and pepper to taste.
Cut the meat into thin pieces with a very sharp knife, place it on a baking tray, cover the meat with the sauce and heat the meat in the oven, covered with aluminum foil, serve hot with its sauce.
