AIRFRYER MINI CHEESECAKES

​Servings: 2 mini-cheesecakes Ingredients:

  • 2 large eggs

  • 16 oz. cream cheese, softened at room temperature

  • ½ teaspoon lemon juice

  • 2 tbsp sour cream

  • 1 tsp vanilla extract

  • ¾ cup zero calorie sweetener or sugar


Directions:

  • Add eggs, lemon juice, vanilla and sweetener or sugar in a blender. Process until smooth and then add the sour cream together with the cream cheese. Continue to blend until free of lumps. The creamier, the better.

  • Line the air fryer basket with parchment paper and pour the batter into it. Place inside the Instapot and cover with the air fryer lid.

  • Bake for 8 to 10 minutes at 350* . Allow to cool on a wire rack and leave in the fridge overnight or at least for 2-3 hs.
